Delivery-only kitchens in the South Bay
South Bay delivery demand supports kitchens that never seat a customer. Across the South Bay, private delivery kitchens share driver pickup areas, storage and on-site staff, and digital food halls run several brands for delivery and takeout.
These buildings run long hours with several brands under one roof, and the shared areas take a beating. We clean each one as a set of zones: brand kitchens, packing, pickup, storage and waste.
Private brand kitchens
Each private kitchen gets the same sequence: walls and equipment exteriors first, then prep surfaces and sinks, and the floor last, so soil always moves down and out. Floors are degreased and squeegeed to the floor sink.
Because operators lease their kitchens separately, crews keep a checklist for each unit and log maintenance issues such as a dripping faucet or a failed door gasket for the site manager.
Packing, pickup and the courier lobby
The pickup area is where couriers wait and where a brand’s reputation is on display. Crews wipe pickup shelving and cubbies, the frames around order screens, counters and door hardware, clean entry glass and walk-off mats, and mop the floor that takes the outside grit. Packing tables are cleared of label scraps, sauce spills and bag debris, and the shelving beneath them is wiped down.
Between the lunch and dinner peaks, a shorter reset of pickup shelves, packing tables and the public restroom keeps the space presentable for drivers.
Cold storage, waste and drains
Delivery kitchens also receive a constant stream of supplies. Receiving doors, hand-truck parking and the corridor that links the dock to the brand kitchens are swept and mopped each night, and the hand sinks along that corridor are scrubbed and restocked so cooks can wash up between deliveries and service.
Shared walk-ins are cleaned around each brand’s product: floors scrubbed, door gaskets and handles wiped, curtain strips washed. The waste room and recycling area are swept and washed, and cardboard is broken down and staged where the hauler collects it. Trench drains and floor sinks across the building are uncovered and cleared.
Overnight turnover
Delivery kitchens close late and reopen for lunch, so cleaning windows are short. Our crew starts after the final order, follows the unit order your site manager chooses and finishes before morning prep begins. Units with an early breakfast brand are cleaned first, and the last to open are cleaned last. Periodic floor scrubbing goes through our floor care team on the slowest night of the week.
A supervisor inspects the overnight work for quality. Crew members are background-checked, and we are insured and bonded, carry workers’ compensation and send a certificate of insurance for the building operator’s file.
Ghost kitchens versus shared kitchens
In a ghost kitchen, each brand has a private kitchen and the shared space is pickup, storage and waste. In a shared kitchen, tenants rotate through the same stations by the hour, so the main job is resetting between bookings. Kitchens that rent stations by the hour are covered on our commercial shared kitchen cleaning page.
New brands move in and out of ghost kitchens often. When a unit turns over, crews clean it from the ceiling line to the floor drain so the next operator starts in an empty, degreased space, and the site manager receives a short report on its condition.
Price is set by the number of brand kitchens, operating hours, daily resets, walk-ins and floor area, and we quote after a walkthrough.
A few useful answers
Common questions.
When does cleaning happen in a kitchen that runs late every night?
After the last order and before morning prep, with an optional reset between the lunch and dinner peaks.
Do you keep separate records for each brand kitchen?
Yes. Each unit has its own checklist, and maintenance issues are logged for the site manager.
Is the courier pickup area cleaned every visit?
Yes. Shelving, counters, door glass, mats and the floor in the pickup area are cleaned every visit.
What separates ghost kitchen cleaning from shared kitchen cleaning?
Ghost kitchens have private brand units plus shared pickup and storage, while shared kitchens rotate tenants through the same stations by the hour.
